Fresh Whole Turkey Roasting – 10 Easy Steps

How much turkey to buy?  Generally 1 lb. per person or 1.5 lbs. if leftovers are desired or 2 lbs. per person for leftovers among big eaters.
For an impressive picture-perfect turkey, and to prevent wings from overbrowning, tuck wing tips underneath the breast.

Directions

1. Keep turkey refrigerated until ready to cook. Remove the bag immediately prior to cooking.
2. Preheat the oven to 350 ºF (165 ºC).
3. Remove the neck from the body cavity and the giblets from the neck cavity. Stuff or season the neck and body cavities (if desired).
4. Secure legs by tucking under skin band or tying together with a cord. Fold wings behind back to secure neck skin.
5. Place turkey on rack in a shallow pan with breast up. Cover loosely with foil.
6. Safe Handling: Wash preparation utensils, work surfaces and hands in hot, soapy water following contact with uncooked turkey and juices.
7. Roast at 350 ºF (165 ºC). (For approximate cooking times, see roasting schedule below.)
8. Check for doneness 1/2 hour before turkey is expected to be done. Uncover the turkey and allow it to brown.
9. Turkey is fully cooked when using a meat thermometer:
- for a stuffed turkey, the thigh's internal temperature is 185 °F (85 °C) and the center of the stuffing should be 165 °F (75 °C)
- the legs move easily when twisted and the juices run clear
10. When done, cover and let stand for 15 minutes before carving to lock in the juices.
