Chicken and Pear Spinach Salad

Nutrition Bonus: This superb salad is an excellent source of vitamin A and folacin and contains a high amount of fibre.


1 cup chopped cooked Lilydale boneless skinless breasts (or thighs) 
1/2 cup prepared poppy seed dressing 
2 medium fresh pears, sliced (about 2 cups) 
1/2  cup fresh blackberries
4 cups baby spinach leaves


  1. Cube chicken and fully cook over medium heat. 
  2. Pour poppy seed dressing over combined pears, berries and chicken in large salad bowl; toss to coat. 
  3. Add spinach; mix lightly. 
  4. You can prepare this ahead: Pour dressing over pears, berries and cooked chicken as directed; cover and refrigerate until ready to use. Toss with spinach just before serving.
