Tex-Mex Turkey Taco Lettuce Cups
These easy lettuce wraps are a lighter version of traditional-style tacos.

1 package (500 g)

1 tbsp (15 mL)vegetable oil

1 tsp (5 mL)Tex-Mex seasoning

1onion, chopped

1clove garlic, minced

3/4 cup (175 mL)prepared taco sauce

16Boston lettuce leaves, washed and dried

1avocado, peeled, pitted and chopped

1 cup (250 mL)queso fresco, crumbled

1/2 cup (125 mL)radish, thinly sliced

1/2 cup (125 mL)green onion, sliced

1/4 cup (60 mL)fresh cilantro, chopped
- Heat oil in large skillet set over medium-high heat; cook Lilydale® Ground Turkey, breaking up with a spoon, for about 5 minutes or until no longer pink and starting to brown.
- Sprinkle Tex-Mex seasoning over cooked Lilydale® Ground Turkey. Reduce heat to medium; add onion and garlic. Cook for 5 to 7 minutes or until softened. Stir in taco sauce; simmer for about 10 minutes or until sauce is thickened slightly.
- To serve, spoon Lilydale® Ground Turkey mixture onto lettuce leaves; top with avocado, queso fresco, radish, green onion and cilantro.
For a salad version, serve cooked Lilydale® Ground Turkey and toppings on a bed of chopped lettuce.
